Jayd, who grew up in Bendigo, Australia and served in the Australian Navy, developed a taste for cultural fusion and innovation in his dishes. With a vast knowledge of flavours from his travels worldwide, he creates fresh ideas in his menu by fusing uncommon tastes, believing food is not just a meal, but a sensory adventure.
